Paleo, Vegan, Gluten-Free
- 1 large pomegranate, seeded
- 1/2 of a cucumber, diced
- 1 shallot, diced
- 1 medium tomato or equivalent in cherry tomatoes, diced
- 2-3 tablespoons of fresh parsley, minced
- 2-3 tablespoons of fresh cilantro, minced
- 1 diced Serrano pepper or jalapeño pepper, seeds and membrabes included*
- 1 small lime, juiced
- 1 tablespoon of avocado oil
- 1 teaspoon of agave syrup or honey (for non-vegan version)
- Sea salt to taste
*For a mild flavor, omit the seeds and membranes. For a medium spiciness, use the seeds and membranes but only half of the pepper.
- In a large bowl, combine all of the ingredients and season with salt to taste. Allow flavors to meld together for at least 30 minutes.
