Spicy Pomegranate Salsa

Paleo, Vegan, Gluten-Free


  • 1 large pomegranate, seeded
  • 1/2 of a cucumber, diced
  • 1 shallot, diced
  • 1 medium tomato or equivalent in cherry tomatoes, diced
  • 2-3 tablespoons of fresh parsley, minced
  • 2-3 tablespoons of fresh cilantro, minced
  • 1 diced Serrano pepper or jalapeño  pepper, seeds and membrabes included*
  • 1 small lime, juiced
  • 1 tablespoon of avocado oil
  • 1 teaspoon of agave syrup or honey (for non-vegan version)
  • Sea salt to taste

*For a mild flavor, omit the seeds and membranes. For a medium spiciness, use the seeds and membranes but only half of the pepper.


  1. In a large bowl, combine all of the ingredients and season with salt to taste. Allow flavors to meld together for at least 30 minutes.
